Living with Purpose Mothers Fitness Challenge (3-month Goal)

The goals of this event were:

  • To empower mothers by encouraging them to adopt and maintain a healthy lifestyle.
  • To raise awareness for community based organizations and their causes.
  • To inspire all women to support each other and work together for a greater good.

Turkey & Pesto Spinach Wraps

Serving Size 7-10 people

Spread Mixture: Combine ½ cup of fat free cream cheese and ½ cup basil pesto (brand “classico”)

2 cups of spinach

1 lb. of lean turkey (or any lean meat you like)

Use 3 spinach wraps or any low calorie/healthy tortilla wrap.

Place each wrap on counter.

Spread 3 TBSN of mixture on the bottom of the wrap (closest to you)

Place 2 oz. of shaved turkey on top of spread

Place 1 oz. of spinach next to the turkey.

** You can add other vegetables if you’d like (i.e. cucumbers, shredded carrots, shredded cheese, olives, etc.)

From the bottom side (closest to you), roll the wrap over the ingredients as tight as you can.

Use a sharp knife to cut the wrap into 3 or 4 rolls.

Plate, serve and enjoy!

Egg White Salmon Muffins by Amy S.

Egg white salmon muffin
Egg whites (one egg white per muffin)
2-4 salmon fillets
2 Bell peppers
1/2 bag frozen Broccoli

For the muffins – you need a non-stick muffin pan, spray with Pam (light coat):First I bake my salmon (you can fry it in Olive Oil) with just a tea spoon of soy sauce. I steam and dice the broccoli, then mix it with diced bell peppers. Then mix one egg white (sometimes I use a little more), with 1-2 tablespoons of shredded salmon and 1 tablespoon of broccoli and bell peppers. Then fill the muffin pan with the mixture. Bake for about 15 minutes!:-)

Sugar Free BBQ Sauce & Oven Fried Fish/Chicken by Maree N.

Sugar free BBQ sauce:
Simmer in pot
1 can Tomato sauce (no sugar or low sugar)
1sm can Tomato paste (add more to thicken as desired)
1 cup chicken/vegi stock
onion flakes or cut pieces
minced garlic
green pepper
1 1/2 tsp liquid smoke
1 packet stevia/truvia
salt and pepper to taste

Pan fried fish/chicken;
hot and spicy pork skins have NO NET CARBS!!
Can use regular ones and season with italian seasonings and add cajun for a difference
place in food processor and use to coat fish or chicken
375* for 20min
